Bikini Recipe

Makes enough for 10 guests

For the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Drink (yields 850ml, enough for 10)

400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Syrup: Place the listed components inside a saucepan, bring to a simmer, stirring so the sugar melts. Then, take off the stove allowing it to cool down fully. Pour into a sterilised bottle, cap it and refrigerate it chilled, where it will keep for about a month.

For the Premix: Combine every spirits and syrup in a sizeable container, allow it to infuse for one hour, then pass it through preferably using muslin, making it completely strained.

To serve: Pour 85ml of your batch mix to a mixing glass containing ice, gently stirring lightly for about 60 seconds until cold. Strain into a chilled martini glass or similar, decorate with some cranberries and complete it by giving it a light spray of the essential oil over the top.
